Woods Effect — landscape images with dark green foliage becoming very bright and light blue skies become very dark.

Invisible flash — Use a flash filtered with an IR-pass/visible-block filter and you can do flash photography without anyone else being able to see the flash.
Macro — Some flowers show patterns in the IR space that aren’t in the visible spectrum (more common with UV than IR) .
